Can we keep it a surprise from the groom?
Yes, and most groups do. One organiser sets it up and runs the dashboard, the link goes in a chat he is not in, and he sees nothing until you hand him the film.
Nobody in our group is going to volunteer to record. What then?

Will the groom see anything if we use the slideshow?
Only if he is in the room when it plays. Set the slideshow to approval so nothing appears before you check it, or skip it and keep the photos for the film.
What should we ask people to say?
Write one question and send it with the link. “What is he going to be like as a husband?” or “what is the thing about him nobody at the wedding knows?” gets a real answer; with no prompt everyone says congratulations and stops.
